Ensures services are maintained at required level. Instructs, guides and counsels Dining Service Staff. Functions as a Food Service Worker II/Dining Services Associate on assigned unit. Performs the tasks of a Food Service Worker II/Utility Worker as needed. Complies with all rules, regulations, policies and procedures that impact job functions. Incorporates culture change in the form of Veteran/ Member-centered care in the performance of job duties.*JOB DUTIES*: Coordinates and oversees the services provided by the Dining Services Staff in an assigned building. Ensures service standards are maintained at required level. Acts as primary link between production staff and Veterans/Members. Ensures items from theproduction kitchen are distributed correctly to each service area in a timely manner and enforces food quality. Tracks level of service through information/reports. Instructs, guides and counsels service staff. Provides training and support. Coordinates regular Service Staff meetings designed to promote a team-based environment (Nursing Staff, Dietary Staff, Housekeeping Staff) whose goal is Veteran/Member satisfaction. Checks products delivered to the Unit Service Area to ensure they meet standards in terms of quality, quantity, taste, temperature, presentation, etc. Reports any problems. Stores food received from Production Kitchen in appropriate holding area and maintains ready for service. Sets up dining room for service with the appropriate china, silverware, etc. Pre-sets tables with beverages, condiments, etc. Sets up food products for service at each meal. Maintains temperature log of items being served during the meal; maintains proper temperature on items being served and rotates items. Meets with Nursing Staff before each meal to inform them about menu choices available for day. Based on Veteran's/Member's prescribed diet and consistency, plates Veteran/Member orders at the request of the Nursing Staff. Helps serve Veterans/Members if needed. Prepares room trays for Veterans/Members unable to come to the dining room. Assists nursing in distributing nourishments. Finishes food items prepped in Production Kitchen (e.g., tossing and dressing salads, plating compound salads, cutting and plating desserts, making toast). Finishes other items to order (e.g., eggs, sandwiches). Clears and cleans tables. Washes all of soiled items. Stores in appropriate space. Cleans Service Area. Takes inventory of all stock or par level items that are maintained in pantry. Keeps areas stocked with basic supplies, nourishments, condiments and sanitation products to meet daily needs of Service Area. Dates, labels and rotates all products in pantry space daily. Fills out service records with number of portions served; completes par level stock sheet and daily meal records. Performs tasks of Food Service Worker II/Utility Worker as needed. Followsdepartment policies and procedures applicable to assigned job responsibilities.Adheres to all safety, sanitation and food storage standards. Complies with all local,state and federal rules and regulations. Participates in staff meetings and attends in-service training. Incorporates culture change in the form of Veteran/Member-centered care in the performance of job duties.*KNOWLEDGE, SKILLS AND ABILITIES (KSAs)*:Knowledge of: Knowledge of rules, regulations, policies procedures of section and work unit Knowledge of preparation of food and serving techniques Knowledge of food textures and consistencies as they relate to Veteran's/Member's ability to consume them without difficulty Knowledge of health hazards in food preparation and storage Knowledg e of safety and sanitation rules Knowledge of kitchen are cleaning proceduresSkill in: Interpersonal skills Verbal and written communication skills Customer services skills Skill in using and operating food service equipment Skill in the preparation of food for cooking and serving Skill in preparing trays that are appealing to the eyeAbility to: Ability to perform some simple cooking procedures Ability to complete simple logs/reports
